Cupcake Island’s
Italian Dream
Cupcakes

(Available in the shop on Thursdays, or by special order on other days)

(Makes 24 cupcakes)

1 stick butter (1/4 lb.)
½ cup vegetable shortening
2 cups white sugar
1 cup buttermilk
5 egg yolks
1 tsp. vanilla
½ cup coconut, flaked or shredded
1 cup chopped pecans
2 cups plain flour, sifted
5 egg whites
1 tsp. baking soda

Preheat oven to 350 degrees.

Cream shortening and butter, add sugar and egg yolks. Beat well. Combine flour and soda, and alternate with buttermilk. Add vanilla, coconut and pecans. Fold in beaten egg whites.

Pour into prepared cupcake pans, and bake at 350° for 20 – 22 minutes.

Frosting:

8 oz. pkg. cream cheese
½ stick butter
1 pound box powdered sugar
1 tsp. vanilla

Beat cream cheese and butter until smooth; add powdered sugar and vanilla. Beat until creamy.
